Original No. 1- The VIVO Salad

The salad that changed everything.

It started with a handful of greens — nothing fancy. Some cherry tomatoes, a bit of cheese, a drizzle of olive oil.

And then came VIVO.

The moment it hit the bowl — and then the plate — everything shifted. It was bright. Unexpected. Full of something we didn’t know a vinegar could do.

Linda took one bite and said, "This is it!"

We’ve been sharing it ever since.

Ingredients

  • 4 cups fresh greens (baby lettuces, arugula, or whatever you like)
  • A handful of cherry tomatoes, halved
  • Shaved Parmigiano Reggiano
  • 2 tablespoons toasted pine nuts
  • High-quality olive oil — a little less than you’d normally use
  • A generous splash of VIVO — don’t be shy, let it shine

Instructions

  1. Toss the greens and tomatoes in a bowl.
  2. Drizzle with olive oil and a bold pour of VIVO.
  3. Top with Parmigiano and pine nuts.
  4. Serve, and maybe say what Linda said- "This is it!"

Dear Vivo,
Just a quick note to say—you’ve officially taken over my salad game. I’ve nearly abandoned olive oil altogether. These days, I just drizzle with Vivo, and honestly, it feels like my body says “thank you” every time. Light, clean, and so alive.
